WINEMAKING DOWN TO THE SMALLEST DETAIL

From the pressing to the fermentation, it is the tasting of the different musts that guides all the decisions of Maison Collery. In our cellars, the vinification of our wines is similar to the work of a goldsmith. Since in each blend lies the search for excellence. This philosophy of precision work requires patience without ever giving in to the easy way. Our best ally is time. It slowly ensures the development of the potential of our wines during fermentation and maturation, until bottling. All our Grand Cru champagnes are vinified on lees in oak vats or stainless steel tanks, generally blended with 20% reserve wines, kept in oak casks.

THE ART OF BLENDING TO MAGNIFY THE TERROIRS

Champagne is a terroir of incomparable richness like a puzzle that fits together to compose our cuvées of the desired typicity. Everything starts at the foot of the vine, where the grapes are the very essence of wine. For this, we work with winegrowers who share our philosophy of Champagne vineyard management, which is essential to the sought-after aromatic expression of the Pinot-Noir and Chardonnay grape varieties, because the terroir is nothing without the work of man and without his involvement. So, to magnify the geological diversity and typicity of an exclusive supply of Grand Cru, Maison Collery acts with skill in the art of precision blending.
