WINE MAKING
Ratafia is made by macerating grape must and wine brandy (fine champagne aged in Cognac and Sauternes barrels). In the Pinot Noir version, we use only this grape variety. We use the cuvée (the first quality must) to make this Ratafia.
TASTING NOTES
Eye:
Brilliant, intense pink color with copper and orange
highlights.
Nose:
Powerful nose, notes of black cherries, slightly peppery, also accompanied by notes of tarragon and aniseed notes.
Palate:
A rounded and smooth attack reveals a magnificent basket of stewed pear and apples. A beautiful,
harmonious finish with spicy notes and licorice stick characterizes this ratafia.

CONSERVATION :
Due to the absence of fermentation, ratafia keeps perfectly over time, away from light. Best eaten chilled, we recommend keeping it refrigerated after opening.
