Maison Collery Ratafia Rosé de Saignée Pinot Noir

RATAFIA ROSÉ DE SAIGNÉE

Ratafia is made by macerating grape must and wine brandy (fine champagne aged in Cognac and Sauternes barrels).

 

In its Rosé de Saignée version, we use only Pinot Noir, whose berries have macerated extensively with the juice, giving it a rich, rounded texture. In accordance with the saignée technique, only a portion of the juice from the maceration tank is drawn off.

TASTING NOTES

Eye:

Deep ruby, Burlat cherry

Nose:

Warm nose of raspberries in alcohol, enhanced by

lovely notes of white pepper.

Palate:

Generous, delicious and smooth, it reveals a

magnificent basket of red fruits, the main part of

which is strawberry.

CONSERVATION :

Due to the absence of fermentation, ratafia keeps perfectly over time, away from light. Best eaten chilled, we recommend keeping it refrigerated after opening.
